This exquisite salsa can be used in dishes that have chicken or pork – the smoky, fresh and acidic flavor of the salsa will give another dimension to these dishes. But that’s not the only application of the salsa because it can also be used in tacos , in appetizers or in any dish that you consider.

- The chipotle peppers have to be in adobo, don’t use them in their dried version.

Perform some Activities- Put in a saucepan:
- 8 Tomatillos.
- The enough Water to cover the tomatillos.
- Bring the saucepan water to a boil over high heat.
- Leave the tomatillos cooking in the boiling water for about 5 minutes, until they turn to a lighter color.
Don’t cook the tomatillos for a long time, because its skin breaks and its flavor becomes bitter. |
- Transfer from the saucepan to a blender, with a kitchen spoon, the tomatillos that were cooked.
- Also add in the blender:
- 2 Chipotle Peppers in Adobo.
- 1/4 of an Onion.
- 1 Garlic clove.
- 1/2 teaspoon of Sugar.
- Blend very well the ingredients and reserve.
- Heat in the saucepan over medium heat 1 tablespoon of olive oil.
- Incorporate in the saucepan:
- The Mixture that was blended.
- 1/4 tablespoon of Salt.
- Mix the saucepan ingredients and bring the chipotle pepper and tomatillo salsa to a boil over high heat.
- When the chipotle pepper and tomatillo salsa boils reduce to medium-low heat and cook it for about 5 minutes, until it thickens a little and acquires a more intense color; stir occasionally.
