Chorizo and Potato
Tostada


Imagine a crispy tortilla to which as base and main ingredient chorizo and potato is put. Afterwards over this base more ingredients are added like: avocado, tomato, Mexican cream, cheese, etc.

At the end you will see served on your table a “mountain of food and of flavor" and you are not going to have any other option than to try this delicious combination of ingredients. Those are the tostadas!

The tostadas are normally
served as entree plate or they can also be served as main course accompanied of some refried beans.

*In the Mexican
cuisine a crispy tortilla is also called tostada which can be prepared, fried or in the oven.

Ingredients

  • 5.2 oz of Chorizo
  • 2 Potatoes (10.5 oz)
  • 4 Tostadas (2.1 oz)
  • 4 Lettuce Leaves (.7 oz)
  • 1 Avocado (8.8 oz)
  • 1 Tomato (7 oz)
  • 1/4 of an Onion (1.2 oz)
  • 4 tablespoons of Mexican Cream
  • 2 tablespoons of crumbled Fresh Cheese (.7 oz)
  • 1/2 tablespoon of Olive Oil
  • 1/2 tablespoon of Salt

  • Cookware

  • 1 Saucepan
  • 1 Frying Pan
  • 1 Chopping Board
  • 1 Kitchen Spoon
  • 1 Turner
  • 1 Knife
  • 1 Fork (optional)

  • Directions

    Cook the Potatoes


    1. Put in a saucepan:
    • 2 Potatoes.
    • The enough Water to cover the potatoes.
    • 1/4 tablespoon of Salt.


    1. Bring the saucepan water to a boil over high heat.
    2. Leave the potatoes cooking in the boiling water for about 20 minutes, until they soften.



    While the Potatoes are Ready...


    1. Cut into strips 1 avocado and 4 lettuce leaves; then set aside.
    2. Dice 1 tomato and reserve.
    3. Finely chop 5.2 oz of chorizo and 1/4 of an onion; then reserve.
    4. Verify that the potatoes that were left cooking are soft, if not cook them for a longer time.


    To know if the potatoes are ready, spear a fork in the potatoes. When you feel that the fork goes in and out smoothly the potatoes are ready.


    1. Take the potatoes from the saucepan with a kitchen spoon and rinse them with cold water.
    2. Peel the potatoes that were cooked and dice them; then set aside.

    Fry some Ingredients


    1. Heat in a frying pan over medium-high heat 1/2 tablespoon of olive oil.
    2. Put in the frying pan the onion that was minced and fry it for approximately 1 minute, until it looks a bit transparent; stir regularly.
    3. Incorporate in the frying pan the chorizo that was minced and fry it for approximately 1½ minutes, until it is lightly cooked; stir regularly.
    4. Incorporate in the frying pan:
    • The dices of the Potatoes that were cut.
    • 1/4 tablespoon of Salt.


    1. Mix the frying pan ingredients and fry them for about 3 minutes, until the chorizo is well cooked; stir regularly. Then set aside.


    When the chorizo is cooked it normally releases a lot of fat, if this happens to you remove it.


    Make the Tostadas


    1. Put over 1 tostada the following ingredients:
    • Some of the Filling that was cooked.
    • 1 tablespoon of Mexican Cream.
    • Some of the Lettuce strips that were cut.
    • Some of the Tomato dices that were chopped.
    • Some of the Avocado strips that were cut.
    • 1/2 tablespoon of crumbled Fresh Cheese.



    Preferably put the ingredients in the same order as given so they stick to each other and the tostada doesn’t ruin.


    1. Repeat the same procedure with other 3 tostadas.

    * It is important to eat the tostadas quick , otherwise they will soften


    Tip: The green salsa or the red salsa go really well with these tostadas.
